Brewing for impact and efficiency: PRYSMA™ at Busa dei Briganti

We brewed this collaboration with Busa dei Briganti in July 2025 to pour on the BarthHaas collab bar at drinktec in Munich, where we were launching PRYSMA™. It was never meant to be a "one-off collab beer." The intent was to put PRYSMA™ into a commercial brew, in a brewery that measures carefully, and let the process and data do the talking.

Hop Science March 2026

Not all hops age the same: The Hop Storage Index (HSI) only partly predicts aroma stability, as storage trials reveal strong variety-specific changes. Citra® proves surprisingly stable, while terpene/terpenoid profiles shift over time. It also becomes clear that more thiols do not automatically mean more tropical aroma - fermentation temperature and yeast strain reshape the overall profile. A deep dive into Citra® maturity highlights a mid-harvest sweet spot, while hop-creep enzyme activity declines with increasing maturity.
