Derived from Simcoe®, Mosaic® was developed and released by the Hop Breeding Company in 2012. This US hop features an enticing balance of floral, tropical, fruity and earthy flavors. A high alpha acid content makes Mosaic® a great dual-purpose hop but it’s strength lies in its smoothness and distinctive aroma that work particularly well in pale ales and IPAs.

Typical Aroma Profile

Similar to Citra® and Cascade, which mirror some of the more fruity characteristics of Mosaic®, a particularly complex aroma profile is what earned Mosaic its name. 

The predominant aromas are tropical - pineapple, mango and passion fruit flavors are what have made Mosaic® hops such a popular choice for IPAs. Other fruity flavors in Mosaic® include tangerine, lime, gooseberries and cassis. 

Underneath, there are floral, grassy and herbal notes. Mosaic® hops evoke the seasons with the springtime scents of blossom and rose, and the herbaceous wintery perfume of pine. You may also detect the spicy, savory and sweet notes of alliums.
